The world pressure for removing the growth promoter antibiotics for animal production, mainly because of their toxicity potential problems, allergies and cross resistance development has increased the search for alternative products aiming the productivity increase.

YEASTS

Eukaryotic unicellular microorganisms used by humans since antiquity and which manipulation caused big impact in food production.

They are able to positively act in the immunologic system and in gut nutrients absorption, either as a selective substrate for a determined group of beneficial commensal bacteria or as immunostimulant.
They are potentially important source of protein (providing essential amino acids) and growth factors. Besides that, they are complex B vitamins and minerals source.

The Saccharomyces cerevisiae deserves to be highlighted, because, besides it´s considered one of the most useful microorganisms for humans, such yeast is one of the most well-known eukaryotic systems. Its cellular wall has 80% to 85% of polysaccharide, especially mannan and glucan, very important fractions for the immunocompetent response modulation as well.
